Cooked this lovely tri-tip at 375°F for 40min in our Dutch oven (covered) and I’m okay with eating rare, but just wondering bc I’m not sure. Trying to educate myself here, so anything helps

Looks like you have everything from well done to rare.

In my opinion tri tip is best cooked medium. The meat is much more tender at that temp. Ribeye is still best medium rare or rare.

Only can tell for sure by knowing what the temp is. 135 is medium rare. 125 is rare.

Ok, just have to ask…why covered in a Dutch oven? Tri-tip is a great cut of beef. Treat it like a steak and give it a reverse sear. Cooking in a Dutch oven is more like a roast, it has it’s place but just not with tri-tip. Also if you don’t have one get an instant read thermometer.
