I desperately wanted jelly, but I am trying to find ways to make things healthier and experiment in the kitchen!

This is a concoction of blended watermelon, honey and gelatin.
It is edible but I can immediately see where I went wrong. I didn't strain the grainy pulp our of the watermelon juice so the top layer of the jelly has a grainy texture where the pulp has risen. The bottom layer is perfect jelly consistency.

I'm pretty happy with the results, no processed sugar. And now I know what to do next time to make it even better.

P.S I made another batch with cranberry juice, honey and gelatin and it is AMAZING.

    Sounds great. I love watermelon but never thought to make it into jelly. You could definitely strain it so it’s not mealy but I don’t think you would even have to. Jam has seeds and texture.

    It sounds good. I thought it was frozen gelatin, at first. I just tried those fruit cups with gel this morning, frozen, and it was pretty great. 😁

    I think tipsy bartender already made this but with vodka, then molded it in watermelon shell and cut it like triangle shape after

    If you want more of a jelly consistency you should use a cheesecloth and a bit more watermelon in your base mixture

  7. I have an allergy to certain raw fruits including bananas and melons. I can still eat bananas if theyve been cooked like in a banana bread but nobody has cooked melons….until now

    OP if you crack the code on this I will be personally grateful!

    Don’t heat the watermelon. Just the bare minimum liquid to dissolve the gelatin.
