60% hydration using whole milk, 1% sugar, 3% salt, holy shit I forgot to add the baking soda I literally just realized and they still turned out great!

    ~30% Leavan. Mix it all up let rise for 4 hrs or so, roll to .5 inch sheet, use a cup to cut em, cold ferment overnight, pan sear med low 3-4 mins each side in butter

    Those look great… My attempts at English muffins have been passable at best. Not nearly what I would consider acceptable from my kitchen.
