Got my husband and I some sirloins for Valentine's Day. I finally got it perfected to our liking, all thanks to you wonderful people! 130°F for 2 hours and then seared on a Ninja grill pan with ghee, garlic, rosemary, and thyme.

I am sure it tasted great and I say this with love … that sear doesn’t look quite up to par.
Usual tips … make sure the steak is super dry when it hits the pan. Good amount of oil (I like avocado) and it really shouldn’t be in the pan for more than 2 minutes at most.
But delicious is delicious, so enjoy!

I have been thinking about switching to sirloins due to cost of NY strip which are normally my favorite. Does the sous vide process help tenderize the sirloin a bit more than other cooking methods?
Regardless, I will try it simply based off of how delicious your cook looks. Cheers!
