Just made 21 burritos for my mom to eat at work for lunch. I think I became my mom’s mom

    Ingredients for 21 burritos:
    – 3 small red onions, diced, I feel like they have way bigger ones in the US because every cooking video has gigantic ones but ours are the size of like a lime
    – 3 red bell peppers, also diced and I used two very large ones
    – about 300g mushrooms, sliced or cut however you like (I wouldn’t recommend whole)
    – 285g corn, I used canned use whatever
    – a pack of enchilada seasoning, or whichever other seasoning you like
    – some lime juice
    – cream cheese with herbs, or without if you want, you can omit it as well but then again you can omit basically everything, it’s your life!!
    – 21 tortillas, I would use corn but my mom wanted this overpriced protein wrap so I used that
    – 200g of shredded cheese of whichever kind, ours just said “belegen” which means something like aged but not super aged if that makes sense, it doesn’t actually matter
    – And then I made half of them with chicken, about 700g and the other half with some vegan ground meat which was about 400g.

    You just sauté all of the veggies and the corn and mushrooms, then you add some of seasoning as well as some lime juice, and then you separately fry the meat.

    Mix it all up together and then you can assemble the burritos, I smear a little bit of cream cheese and add about 100g of the filling.

    Then you wrap them up, put them on a baking sheet or in a baking dish and throw the whole load of cheese on top! Since I had two types I also added some poppy seeds on the ground meat ones so they’re distinguishable.

    EDIT: I forgot to tell yall I put them in the oven for 10 minutes at 200°C. I think it was fairly obvious you put them in the oven but I fear for that one person that is horrid at cooking so to that person: put em in the oven!!!
