Personal recipe. I make my own spice mix and use Greek yoghurt to marinate. Let me know if you need details I will post later.

    Recipe:
    Spice mix :
    Half a teaspoon Crushed black pepper , 1 teaspoon coriander powder, half a teaspoon cumin powder, half a teaspoon Kashmiri red chili, quarter teaspoon turmeric powder, 1 teaspoon fenugreek leaves, half a teaspoon black cardamom powder + cloves powder(optional), 1 teaspoon gram flour (optional, it gives a very nice nutty taste which I like)

    Add a couple of teaspoon of the above spice mix to half a cup of hung yogurt or Greek yogurt. Mix it well.

    First marination : Make gashes in chicken quarters at the most thickest parts. For a couple of chicken quarters take four cloves of garlic an equal amount of ginger. Make a paste out of it. Put the paste in the gashes. Sprinkle one spoon of salt on the chicken (optional you can replace it with black salt) add quarter cup lime juice.

    Second imagination : rub the spice and Greek yogurt mix on chicken.

    Finally add oil on top of it. Marinate for a couple of hours or overnight.

    Bring the temperature on classic Joe to 400 to 425°F. cook chicken for one hour or until the internal temperature reaches to about 170 to 180°F.

    Tips: on Joetisserie the chicken falls off if you don’t tie it with butcher twine.
