
Made a quick silken tofu scramble with sautéed mushrooms and red pepper. Served it on a piece of toasted bread and with kimchi on the side. It was a perfect light lunch and thought you might like it.
Rough recipe for the scramble:
– Sauté mushrooms and red pepper on a bit of olive oil and set aside.
– Heat a bit of olive oil, add turmeric and fry it for a minute.
– Add silken tofu cut in thick slices.
– Season with nutritional yeas, onion and garlic powder and salt.
– Sauté for couple of minutes then add the previously prepared mushrooms and red pepper.

I like one I saw posted on Reddit: caramelize some onions, add rose harissa pasta (or harissa paste and a little rosewater), then add your silken tofu. Absolutely delicious!
I have an oilless version of this for weekday b-fast.
