1. Fried tofu and bibim guksu – I packed this for lunch, the tofu was coated with tapioca starch, salt, black pepper, and gochugaru. The noodles had a kimchi based sauce and chopped lettuce. Super delicious, and convenient because it doesn’t need a microwave.

  2. Jjajangmyeon with chonggak kimchi- I made my own sauce, with cabbage, onions, and pork belly, but using ramen noodles. Paired perfectly with the kimchi.

  3. Tteokbokki with tofu and cabbage – does it still count as tteokbokki? Idk, but I’m trying to be healthy while still enjoying tteokbokki, so I’m going with it. Tteokbokki or not, it was amazing.

  4. Gochujang meatballs – I made this as a lunch for my dad, with stirfried zucchini and carrots. I didn’t try it myself, but the report back is that it was good.

  5. Japchae and gochujang meatballs- this was my lunch box, same meatballs as my dad’s, but with garlic. Japchae was just with whatever was in my fridge (carrots, cabbage, onion, and spinach).

  6. Mayak gyeran – a simple breakfast, not much to say but it was yummy.

    Anyone got a good recipe or tips for the Mayak eggs?

    Sounds like a perfect banchan to make for a busy work week.
