I am a huge pho lover, doing the math for my favorite pho spot, calories from rice noodles alone come out to be 450 calories as rice noodles are criminally high in calories.
I subbed half of the noodles for bean sprouts and enoki mushrooms, it felt like I was eating noodles forever and could barely tell the difference. It was so satisfying and delicious.
I also added 3 servings of veggies to make it higher in fiber and more nutritious. This made the bowl even larger, I was eating the bowl for a long time.
I followed a TikTok recipe for the broth, is it simply a whole chicken boiled for an hour with pho spice mix, ginger, onion, and fish sauce. It turned out so good and so comparable in taste to the one I get from restaurants.
I wasn’t sure how to calculate stock calories, so I just logged it in as the 365 chicken stock brand.
