Manager says im not finding mould, just dust accumulating on drips.
Ignored him and cleaned out the whole Walk In Fridge anyway. Gross.

Were they trying to convince you not to clean it il the first place?
oscarfletcher
Either way, it means it’s not clean. I’ve heard calling the health department can help settle this dispute.

Either way that kitchen is dirty as fuck.

Name and shame.

You sure it wasn’t a “you totally don’t see mold right now, especially cause you’re cleaning it ;)” type of situations?
Still that shit needs to be done way more often lol

The best part is when you scrub the shelf and the green paint comes off

That’s mold. Dust doesn’t form mycelium. Your owners are gross as hell and living in denial. There’s dust there, too, to be sure, but you’re running a mold factory. I don’t understand how the health inspector hasn’t shut you down.
Popular-Capital6330
someone should snitch to the owner before that manager ignores something even worse. Drop those pictures in their inbox and run like hell.

Manager here- Can confirm that’s mold. Thanks for taking the time to clean it.

This should not be kept confidential. Name & shame so no one gets sick. (I’m sure OP did a fine job cleaning, but they may not work there forever)

Your manager sounds like a funghi

That’s definitely mold

Check that manager on his ServSafe time and temp control. Make him bet his job on his answers.

I know a CFA when I see one. Email health department, email ecosure if you can find a contact.

Have them get a power washer. Every nice clean kitchen I have ever worked in has power washed at least once a week and walk ins every 2-4 weeks
juanitovaldeznuts
You may have cleaned the surface mold, but i guarantee the spores persist. I would be surprised if the vents didn’t look like Paul Stamets’ closet.
That gives me motivation to look at my fridges on my next shift
sticky_toes2024
Send those pics to the health department. A surprise inspection will happen.

What a cultured kitchen your manager is running. I’m sure is very wise and a pleasure to work with.

They’re a nasty person. As them if they would use that argument with the health inspector, if if they’re just trying poorly to gaslight you.

Hi, hvac tech here. If the shelves look like this, you need to get your cooling unit cleaned as well, or this will only come back. A refrigeration company can do this service for you. Manager may not let it happen though.
Great job cleaning this up, you are 100% doing the right thing. Your manager is dead wrong.

Fuck me man. That much mold in the walk-in, spores. Everything in there is contaminated.

Worked at a place where the beer cooler looked like that. They knew it was mold. But would not give us time to clean it.
