    Looks so good! Is that just a baking sheet with a bit of a lip? I don’t have a high sided pan to cook it in, but if this will work…

    Really nice, but be careful of that paper lol maybe just trim it with scissors before you bake, I’ve set a few oven fires lol

    What is your hydration level? 85%? 90%?

    On YT I found a video of a French bakery and they were using something like 50% flour and 50% semolina, and I have been tempted to make it like thatl, they were using different toppings at the end
    Since you have 1 year perfectioning your experience, what do you think of using semolina?
