    I love ika for its texture, taste, and the way it’s scored with a knife depending on the sushi chef. If I can get otoro, ika, uni, masago (or ikura), and amaebi if it’s in season, I’m basically set 😋

    For me, good quality raw squid is oh so melt on your mouth while still maintaining a really interesting crunchy pop in your mouth texture.

  3. A good Ika will ruin you. You will order it again and again hoping to get that same hit, only to be met with a chew that you can only pretend was as good as those few times it truly, truly changes your life.

    Fyi that squid comes in frozen packets. Not the best thing you can eat at a sushi bar.
