


















Had a phenomenal meal at MAZ, each dish was eye catching and majority of them also matched its visuals in flavour. Naturally needed to share the pictures.
Entering to the restaurant, feels like I’m transported from surrounding shops into a new world. Immediately I’m given an explanation to the concept and some of the key ingredients to the meal.
Menu consisted of:
– Hairy crab peruvian snack, gelatoine crab wrapped around snow crab (like a taco), snow crab tartare
Botan ebi, crepe with ebi squash sauce and ebi tartare
Scallop, peruvian pepper sauce and scallop paste paste. Scallop fried bread
Wagyu sweet bread with nanohana. fried potato with cream and Japanese herbs
Ito fish, mushroom, ikura, nuts
Octopus and squid sauce with Squid and Fried Shirako at the bottom
Huatia root vegetable(cooked in clay) and shika with fried noodles
Lucuma, frozen pastry with a ball made of mikan cacao and mikan sauce inside
6 cacao desserts: Hoja Sorbet, mesocarpo extract juice, cacao nibs with flambe, escarpo sorbet with dulce de lece, cacao cookie, cacao nib concentrated syrup
I thoroughly enjoyed most dishes, I didn’t really connect much with the wagyu sweet bread and huatia in terms of flavour profile. The crab, scallop and cacao dessert courses were the highlights for me being able to try many different dishes. Service was impeccable, chefs seemed to be all from Peru/foreigners. Wait staff were very hospitable and spoke english and Japanese. The head chef stopped by to present 3 dishes and chatted with me a bit which I enjoyed alot
Had booked through tablecheck with the food course costing about ¥35,000. They have an amazing cocktail pairing offer, I only chose a few non alcoholic cocktails and they all tasted amazing while looking horrific lol. Eating alone the course took about 100 minutes, seemed to be 2 seatings that night with only half the restaurant (4 tables) in the first seating and I was the only foreigner in thar seating. Caught the second seating towards tail end of mine and saw it was mostly foreigners

Maz is incredible, I loved the 6 cacao desserts and one of the best non alcoholic pairing I’ve had. A friend went to both Maz and Central. He felt Central was a better experience but Maz had the better food largely due to the incorporation of Japanese ingredients.
