    Went as a solo diner while staying with my two kids at the resort. Michelin star was definitely well-earned – delightful meal with warm, attentive service (I especially appreciated the staff engaging me in conversation about the dishes since I was solo) and lovely Mexican wine pairings, with a tequila to finish the night. All of the dishes were great, clearly rooted in Mexican traditional dishes with French technique applied. Many playful dishes – popping bubbles for vapor, eating with your hands, brioche provided to soak up every last bit of a sauce-forward dish. Mexican wines had a few standouts, but also a couple of pairings where I thought the dish & wine were better by themselves.

    Standout dishes for me were the escamoles tetela (insect larve over corn masa) with every bite unique and delicious (loved the chili on each corner for a bit of heat), the truffle beignet, and the aged duck with pink mile (every item on the plate perfectly complemented the other, and I don’t typically care much for duck or beets).

    Overall great price point ($175 USD) for the quality of the meal, wine pairing, service, abd overall ambiance. Meal time just under three hours, altho there were a couple of short pauses as the kitchen was a bit delayed – but nothing terrible.

    So assuming this an a la cart restaurant on top of normal resort AI? And is it open to non-guests?

    My husband and I went in late December. We still talk about this meal and it’s one of our favorite Michelin starred meals to date. Driving up to the resort as non-guests was wild though; armed guards everywhere and super dystopian.
