Husband and I made this dish last night. It was amazing! I was initially skeptical as some of the newer/test kitchen recipes like this we have gotten were hit or miss.
We did not dry out the ricotta and added more flour than the recipe asked for. Ended up taking less than an hour but it was also two of us working together.

This one is time consuming but perfect for 2 people. I made the gnudi and my wife did the veggies. Cuts the time almost in half. It was slightly different than last time and much better. 8.5/10.
I did dry the ricotta and it came off the paper towel surprisingly easy. Husband and I really liked the dish.
