It looked pretty good until I accidentally added a whole can of coconut milk. I panicked after realizing I probably needed less than a can, but it was already open. Oh well. I am too embarrassed to take this to work for lunch.

    This is sooooooo interesting. Probably good, definitely not chicken Tikka masala, but interesting for sure.

    I’m gonna tell you my hack for quick butter chicken: skip all the steps.

    Use an instant PACKET (not jar!!!) of butter chicken masala, something like Shan masala.

    1. Marinade the chicken according to the instructions on the packet, fry it in a pan.
    2. Add a can of crushed tomatoes or tomato sauce. Stir it around, cook the chicken a bit.
    3. Add the rest of the masala packet. Stir it around until the chicken is cooked.
    4. Then add heavy cream. Done! Delicious, and also red.
