Hi I just wanted to know if this is safe to make my first ever kimchi batch this weekend – please?

It is slightly out of date and has a warning so kind of freaking out about it..

The date says: 2025.01.02 (It is airtight,unopened, and has been kept in a cupboard in the dark and dry?) Does it go bad quickly after the date or should it be Ok

And the cancer warning is something I've not seen before.

    It’s fine. California slaps that warning on damn near everything imported from Asian countries because they can’t directly monitor the production and vouch for the contents. It’s a bit of a Boy-who-cried-wolf situation, where they use the warning so excessively that it loses its value.

    You’re fine, Korea is not trying to poison you.

    This is the stuff I use (on basically everything), it’s great! Don’t worry about the warning, it’s just a labelling requirement that means practically nothing.

    I’m sure you are fine with the date. I’ve had stuff for years and it’s been perfectly fine. After you open it if you want to keep it completely safe I’d recommend putting it in the freezer as it inhibits mold growth.
