I would first cut back on the number of sesame seeds. There’s way too much. And what is on the salmon nigiri? A spread of..? Lose that, too. But, if you must use it, take a little amount and spread it over the rice and put the fish on top of it. Take a small amount of the stuff and roll it in a ball between you finger’s so it is somewhat small and place it right on top of the fish, in the middle. As far as chives or other greens, add them if they contribute to the dish. For example, salmon nigiri, with a small amount (half a penny size) of crème fraîche, and on top of that, black caviar/fish roe and a small amount of finely chopped chives. Do you notice that the resurants use unique serving platters and fancy garnishes but don’t mess with the main dish that much? With sushi, less is more. In the cucumber rolls, I prefer the cucumber cut into smaller strips. It might look better, too.
