I don’t want to hear anyone call chuck roast “poor man’s brisket” anymore. Brisket is cheaper than chuck roast these days.

    it’s always referred to total cost. a lot of people can justify dropping 20 bucks on a chuck, but not 50 on a brisket

    Ya but I can buy a $20 chuck to cook. Brisket is going to run you bare minimum of $74

  3. It’s somewhat of a misnomer. People don’t usually say it because it’s cheaper per pound, but because a 4-5 pound chuck roast is significantly less costly than, say, a 15 pound brisket. It’s why I often recommend that people who want to learn how to smoke a brisket start with a chuck roast, especially if they can get it on sale for under $5 a pound or so. If they mess it up, they’ve messed up a lot less money than on a full brisket, and the technique is very similar.

  6. Per Lb yes but thats because people dont buy 30+ Lbs of chuck!

    Anywho yes sellers suck for this !
    both cuts are getting price gauged

    Yeah I ***just*** made smoked chili with a pair of these at the same price.

    I actually considered grabbing a packer and cooking it but I didnt really want to put in the 12 hrs, as I ended up smoking the chucks at 10pm the night before the chili.

    FYI ground chuck only has to contain a certain percentage of chuck. The rest is scrap filler.

    Brisket used to be considered a waste product because it’s not lean.

    Brisket is, and has always been, cheaper per pound. But you don’t buy a 14lb chuck roast. So the overall cost is typically more with brisket.

  11. When I lived in Texas, brisket was always cheaper than chuck. Of course, we always compared the per pound prices.

    chuck is always 2x the price of brisket in my area, the whole “poor mans” is a total misnomer.

    you might pay less because you’re buying fewer pounds of chuck at a time, but you can always buy less brisket too.

  14. I’ve done both and personally prefer brisket. It’s got such a unique flavor and texture compared to any other cut, chuck included. I’ll save the chuck for my wife’s pot roast.

    Have you tried beef cheeks? Could be hard to find at a grocery store, but well worth it.
