Bake at the centre of a preheated oven (350Β°F or 175Β°C) for 30-35 minutes or until a skewer inserted in the centre comes out clean. I use a 20cm cake tin!
Whipped cream (35% fat) with 10% sugar (use 10 grams caster sugar for every 100 millilitres of cream). Whip until reaching stiff peaks.
Assembly:
Cut cake in half.
Spread a layer of raspberry jam on one half of the cake, then add a layer of the mascarpone filling. Frost with whipped cream.

The fudge cake was made using this recipe: https://addapinch.com/the-best-chocolate-cake-recipe-ever/ . I use a fan/convection oven, so I lowered the temperature to 325Β°F/160Β°C and kept it in for longer. Then, I spread chocolate buttercream (this recipe: https://addapinch.com/perfect-chocolate-buttercream-frosting-recipe/) on one half and added apricot jam. Then I used the remainder of the buttercream to frost the cake.
The cream cake is my own recipe:
Cake:

6 tbsp whisked(!) whipped cream

Assembly:
