Questions, though.

  • How long should the pasta sit, if at all, before cooking?
  • Any tips on cooking times? I only cooked mine for like 2 minutes and it wasn’t al dente enough for me.

    Looks amazing. Ready to eat whenever. I start testing it once it starts floating. If you haven’t dried it at all, should be somewhere in that 2-4 min range. Something like that? I don’t time it that closely…

    Good first attempt. I can see that the dough is nicely worked and cleanly cut.

    You can leave them out for pretty much as long as you like, but i wouldn’t do it nestled into balls. Id lie them out. That will help the texture.

    One thing worth mentioning is that unless the pasta is 100% dry, you will never really get that al dente dry centre as you do with dried pasta because the pasta is already somewhat hydrated.
    Instead, you just need to accept that and keep an eye on your cooking time.

    I would check after one minute from the water coming back up to boiling, and probably transfer the pasta over to sauce for creaming pretty shortly thereafter
