Italian Breadsticks – Grissini
5 cups all purpose flour
1 and ½ tsp salt
2 tbsp oregano
1 + ¼ cups water
1 tbsp sugar
1 tsp honey
1 and ½ tsp dry yeast
¼ cup olive oil
In a bowl add 5 cups of flour, 1 and ½ tsp salt and 2 tsp oregano, mix together.
In a measuring pitcher, add 1 plus ¼ cups of water, 1 tbsp sugar, 1 tsp honey, 1 and ½ tsps dry yeast, mix together.
Mix the dry and wet ingredients together then, add ¼ cup of olive oil, keep mixing until you get a smooth dough.
Make a ball, cover it and let it proof in a cold oven with the light on for 4 hours.
After 4 hours, divide the dough in half, roll it in 1/8” thick rectangular shape then, make 1” wide stripes.
Pinch the sides of the stripes together then, roll them creating a cylinder ( if too long, cut it in half to fit the pan).
Cover the grissini with a towel and let tehm rest for other 20 min before cooking at 355F for 20 -25 minutes.
