Ingredients:
For the beef marinade:
1 kg beef, cut into bite-sized pieces
1 cup plain yogurt

A handful of fresh mint leaves, chopped
Saffron strands soaked in 1/4 cup warm milk
2 tablespoons ghee or clarified butter
Instructions:
Marinate the beef:
In a large bowl, combine the beef pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Mix well to coat the beef evenly. Cover and refrigerate for at least 2 hours or overnight for best results.
Cook the beef:
Heat 2 tablespoons of oil in a heavy-bottomed pot over medium heat. Add the marinated beef and cook until the meat is tender and the oil separates from the masala. This may take about 45 minutes to an hour. Stir occasionally to prevent sticking.
Prepare the rice:
In a large pot, bring water to a boil. Add bay leaves, cardamom pods, cloves, cinnamon stick, and salt. Add the soaked rice and cook until it’s 70% cooked (the grains should still be firm). Drain the rice and set aside.
Layering the biryani:
In the pot with the cooked beef, spread half of the partially cooked rice over the meat. Sprinkle half of the fried onions, coriander leaves, and mint leaves. Drizzle half of the saffron-infused milk and ghee over the layer. Repeat with the remaining rice, herbs, saffron milk, and ghee.

Once done, gently fluff the biryani to mix the layers. Serve hot with raita (yogurt sauce) or a side salad.
