Jackpot. Marbling within each muscle looks great. The tough that layers separating sections are substantial. No way to render the steak burns.
Ribeye is my favorite cut, and I’ve become a big proponent of cooking the cap/spinalis and eye separately. Usually, I just leave the tail with the eye, but that’s another option.
If you haven’t done it before, these are a perfect opportunity to separate, trim out some of the tough fat, and cook separate
