Seafood Risotto
Serves 4
Ingredients
Risotto:
• 1 cup Arborio rice
• ½ cup ZD Chardonnay
• 1 shallot, diced
• 2 garlic cloves, diced
• 1 tbsp double-concentrated tomato paste
• ½ large red bell pepper, diced
• 2 tbsp avocado oil
• ½ tsp Old Bay seasoning
• 2–3 tbsp crème fraîche
• Juice of ½ lemon
• ½ cup edamame
• ½ cup chopped Italian parsley
Cooking Liquid:
• 4 cups chicken broth
• 2 cups water
• Pinch of saffron
• 1 tbsp Better Than Bouillon Lobster base
Instructions
1. Prepare the Cooking Liquid:
In a large saucepan over low heat, combine the chicken broth, water, saffron, and lobster base. Let it warm gently to allow the saffron to bloom and the flavors to meld. Keep the liquid warm without boiling.
2. Sauté the Aromatics:
In a deep sauté pan over medium-low heat, warm the avocado oil. Add the shallot, garlic, and red bell pepper, sautéing for about 5 minutes until softened and fragrant.
3. Toast the Rice:
Stir in the Arborio rice, Old Bay seasoning, and tomato paste. Sauté for another 5 minutes, allowing the rice to absorb flavors and lightly toast.
4. Deglaze with Wine:
Pour in the Chardonnay, stirring to scrape up any browned bits from the bottom of the pan. Let the wine absorb into the rice.
5. Cook the Risotto:
Add the warm cooking liquid ½ cup at a time, stirring constantly. Wait for each addition to be absorbed before adding the next. Continue this process until the rice is creamy and fully cooked, about 40 minutes.
6. Finish the Dish:
Stir in the crème fraîche, edamame, lemon juice, and chopped parsley. Taste and adjust seasoning with salt and pepper as needed.
7. Serve & Enjoy:
Plate the risotto with your favorite seafood and pair it with a glass of ZD Reserve Chardonnay.
