I mean, if you’re going crunchy ground beef/chicken tacos like this then honestly Taco Bell sauces. They were literally made in a lab to go perfectly with this style and they hit the mark.
Any other more authentic style taco is a different story and far too dependent on personal preference to give any real answer

Torchbearer Garlic Reaper is the one I keep going back to for tacos. That or my own homemade sauce that also has lots of garlic and reapers.
Dave’s Hurtin Habanero is my favorite for tacos if I’m not using one of my homemade sauces.

I use Melinda’s creamy ghost pepper on tacos. I love Tabasco, but it’s the wrong flavor profile. I’ve only just tried a Marie Sharp’s habenero, and I’d definitely do that. Not too sweet, like most habenero sauces are. I like it a lot.

I just had Taco Bell yesterday for lunch, and no longer grab packets of sauce when I go, because I keep a nice selection of sauces at work.
My chalupa had half Pepper North Black Cherry & Reaper, and half Palo Alto Firefighters Habanero.
The crunchy taco was loaded up with Outer Limits Ghost Pepper & Roasted Garlic (That was spicy).
The fiesta potatoes just got doused in Queen Majesty Red Habanero and Coffee.

I really like habanero for tacos. There are a couple of local places that make really good hab sauce. I think the best was made an old friend’s mom.

For tacos I prefer homemade salsa, roasted green tomatoes, habaneros, onion, garlic, salt and cilantro. The green tomatoes give an almost citrusy taste and you can choose your heat to your liking with the peppers.

There is a salsa that I believe is popular in the Yucatán area of Mexico that is made with chopped red onion, chopped habanero pepper, minced garlic, salt, pepper, oregano and vinegar. It is phenomenal on tacos. It’s like a pickled salsa. Highly recommend it!
