    Most folks would recommend that once out of the bath you chill them a bit, the before you sear make sure to get the surface of the meat as dry as you can. Moisture is the enemy of browning.

    Whatever finish temp you like your steak, run the bath at that temp. Rare is 125-130, medium 130-140. Chill them well before searing quickly, don’t cook them or you’ll be pissed, just a really hot skillet for 30-60 seconds.

    137 for 2 to 3 hours, pat dry, season and toss in the hot cast iron for a minute or two a side. Add a potato and salad and I’ll be over for dinner!

  5. If you’re putting it in cast iron, skip the grill. If you’re grilling it, skip the cast iron.

    I tried getting my stainless steel pan hot on my gas grill. The grill showed the temp at 550º and I let it sit there for several minutes. I couldn’t get a good sear even after drying the steak and leaving in the fridge for a good 15-20 minutes. However, the next time I used my cast iron pan (doing the drying and in the fridge) on my electric stove and got wonderful results! I used avocado oil and even that was smoking before I added the steak. Make sure you come back and tell us how it went.
