It's a low cal Mac that uses cauliflower as a sauce base. The only cauliflower that was in the store today was purple cauliflower. You know what happens when you combine purple cauliflower with yellow cheese? That. Tastes just fine though.

Also, if you’re going to make such dramatic substitutions, don’t call it macaroni & cheese, especially when the noodles you used aren’t even macaroni anyway.
