    # Middle Eastern Lentil Soup

    **Serves:** 4

    **Prep Time:** 2 mins

    **Cook Time:** 25 mins

    # Ingredients

    * 2 tbps olive oil
    * 1 large brown onion (diced)
    * 1 1/2 L hot water
    * 1 tsp vegetable stock (or one vegetable stock cube)
    * 350 g dry red lentils
    * 2 tsp cumin
    * 2 tsp curry powder
    * 2 tbps lemon juice

    * chopped coriander to serve
    * drizzle olive oil to serve
    * wholemeal sourdough (toasted) to serve
    * (optional) greek yoghurt to serve
    * (optional) red chili flakes to serve

    # Instructions

    1. Heat olive oil in a wok and add onion for 5 minutes (until browned)
    2. Add hot water, stock cube/powder, lentils, cumin and curry powder
    3. Simmer for 20 minutes, stirring occasionally
    4. (Optional) Blitz with a stick mixer for a smoother consistency
    5. Serve hot with toasted bread- drizzle with olive oil and garnish with coriander.
    6. Add optional garnishes if desired
