This week's prep was a tex-mex casserole.
Never made a casserole before.
Didn't realize my rice wasn't cooked in the middle until after I started portioning it.
Next time, I'll pre cook the rice. Or at least check it before portioning.
Managed to save some around the edges, about 6 servings (out of 14). Luckily I already had all the ingredients so my grocery bill was cheap this week. The rice was fluffy and tender around the edges.
Looks like half a week of frozen foods.

keep your rice separate until you are ready to eat it.

If you want to try to salvage it I’d throw a can of diced tomato with the liquid on the parts that aren’t cooked, cover it, and bake it low temp like 300 for 30 min and see if it softens at all. I hate food waste so I try to salvage all my fails but that’s just me!
If you’re planning to reheat anyway, I would try adding some extra sauce and microwaving for a bit longer than usual.

We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!
Ingredients:
– 90/10 ground beef
– black beans, drained and rinsed
– frozen corn
– white rice
– reduced sodium beef broth
– fire roasted tomatoes and green chiles
– reduced fat shredded Mexican cheese
– salt, pepper, seasonings
Not a fail…a lesson. Lol
You can always add liquid and put it back in the oven.
add a bunch of broth and a few shakes of taco seasoning. Cook it long enough to soften the rice and suddenly it’s taco soup 🤗
I had this same thing happen one time to me in a different type of dish with rice. I was so upset. It takes a lot of time and effort to create meals and it feels like devastation!!! It looks amazing though and I bet it tastes great!!!

Did you follow a recipe or made it up yourself? Recipe usually have specific cooking time instructions

Just toss it all back together and recook. In this case its only a fail if you give up. Casserole is very very forgiving.
