How to clean & bake fish with chermoula & vegetables
1. Clean the fish as shown in the video, make cuts in the fish, rince under the sink at least 3 times. Sprinke some lemon juice on the fish, leave until u prepare the marinade ( Moroccan chermoula)
2. Moroccan chermoula sauce ( fish marinade)
1/2 cup chopped cilintro & Italian parsley
Juice of 1 lemon
3tbp vinegar
6 minced cloves of garlic
1tbp minced fresh ginger with garlic
Pepper, salt, 1tbp paprika, 1tsp cumin, 1/2tsp turmeric, 1tsp hot harissa or chilly, 50ml olive oil.
Marinate the fish in the chermoula at least 1 hour, ideally overnight.
In a pan going to the oven, put potatoes, carrots, bell peppers, add 1 large grated tomatoes, 1tbp paprika, 3 minced cloves of garlic, salt, mix as in the video, add the fish. Add 1 cup of boiling water to the remaining marinade, add100ml olive oil, decorate with slices of tomatoes and fresh lemon, u can add kalamata olives, hot peppers. add to the pan, cover with parchemin paper & foil, bake in a preheated oven 460F for 60min, uncover for another 30 min or until u get the sauce thickness and fish color u wish.
