  4. Also, cook poultry at 325 degrees. That way the skin isn’t rubbery.

    What a waste of pans. 0-400 method with some baking powder in your seasoning for skin crispiness works like a champ.

    Chicken is good to start with. Take time to learn! Different styles and sessionings. Quarters are always the best to smoke! I did 40 lbs and 4 Boston butt’s for my sons wedding. I had to borrow a friend’s stick burner to get them all done. I was up all night cooking and prepping. I don’t remember much of the wedding, lol! But I did not bring any leftovers. Part of his friends were from NYC and Seattle. They had never had real BBQ. They ate the most!

    Don’t use the pans next time, especially aluminum ones. Aluminum has been linked to Alzheimer’s. You can find plenty of research on that on line.
