What to do when you live on a mountain in upstate New York, surrounded by snow and nowhere to go. Suddenly you discover that you have eggs, black pepper, pecorino, guanciale e spaghetti alla chitarra (tonnarelli), what a man is supposed to do?

You thank god you had all ingredients for perfect carbonara.
Edit: a bit shy with the pepper I see.
Looks ok, except guanciale is traditionally (read: best) cut into small strips that contain a balance of meat and fat, rather than large chunks like this. Still, that looks like a satisfying plate of pasta for a winter’s day!
