I don’t know where I went wrong. Put 7 pork butts in at 200 degrees and two hours after, I had a massive grease fire that scorched every one of them from top to bottom. Using a vertical pit boss. I had a pan underneath to catch the grease, along with the normal catch pan on a pit boss 1077. Pic for the start, RIP to the end. Just trying to figure out where I went wrong and how to prevent.   1. I’m no expert, but it looks to me like the meat is too close to the edges of the rack. Drippings likely missed the pan on the way down and got down to the fire pot.

    It’s actually insane to me that you cooked like this, the meat is touching the walls. Drippings went down and caught fire, expensive lesson to learn.

    Get bigger gear, or cook in smaller batches.
