This makes a huge salad or two smaller servings for about 400cal/serving. I had mine with some sliced flank steak but it’s good with anything, high in fiber and magnesium!

Arugula, chopped dates, homemade roasted chickpeas, pumpkin seeds, Chopped Monterey ArtiHearts, homemade tahini lemon vinaigrette!

    I have an arugula addiction, and I love your username (I also have a Diet Coke addiction, hence my username). Would 100% devour this.

    Funny enough, I don’t use it as salad all that often, but I looooooove tossing it with fresh lemon juice and topping all sorts of dishes with it. Thin crust pizza, pan fried chicken cutlets, warm rice or quinoa dishes, etc.
