My sister got these milk cheese cookies from Japan and i have been obsessed with them and trying to recreate them. I am able to get the cookie part right, but having some trouble with the filling. They use camembert cheese, and white chocolate. When i tried spreading camembert between the cookies, the cookie became soggy after like 30 minutes due to moisture from cheese. I have no idea how to incorporate camembert and chocolate and make it into a little square. I am thinking of mixing in melted chocolate into cheese, but not sure if it will harden when cooled. Wondering anyone has any idea or suggestion?
