Steak from local butcher shop. Would y’all say this is medium or medium rare?

    Looks medium-rare to me. Color can definitely be misleading based on the cut and other factors. The only definitive way to tell is temperature – did you check it?

  2. Right on the edge of medium/medium rare to me, closer to medium rare if the photo is accurately capturing the color.

    It looks in between medium rare and medium. I know that’s a cop out, but to me it’s not quite MR, but also not Medium.

    But I’d smash that like Hulk!

    In the industry, we call this a “med-rare push.” Definitely the best way for cuts with a higher amount of marbling to get more melting of the fat.

    Medium-rare. Color representation can vary a great deal depending on camera, lighting and display. But this color does looks medium-rare and the slightly “slick” glossy center of the second piece from the left confirms it for me.

    So many factors make it hard to tell from just looking at a picture, like lighting and filters and stuff but it looks pretty damn close to medium rare to me. I saw someone said medium, and it definitely looks a little less done than medium to me. But sometimes in dimmer light, meat can look more red than it really is, and conversely in direct sunlight some steak looks less red than it actually is

    It is the perfect cook, medium rare plus.

    I order all my steaks medium rare, and most come out more cooked than this. Too many chef’s hear medium rare and think the customer really wants medium. Under cooked steaks get sent back much more consistently than slightly overcooked steaks.

    You split the difference between the two it comes down to how true your color is and if it is center cut or edge. I would say it could be served as either but center cuts swing toward medium rare.

    The piece on the far left is damn near Med Well
