4.5lb chuck roast. Can’t decide whether to throw this on my pellet grill, do an overnight smoke maybe finish it with a braise, or whether I should sous vide it. Any thoughts?

    Cube it, lather them up in rub and make poor mans burnt ends on the smoker.

    Cube it and smoke at lowest setting for an hour or two. Then use to make a bad ass 3 dump chili.

    Poor man’s burnt ends are popular. Smoke it whole, put into a crock and finish it out as a stew or roast with potatoes and carrots.
