This was the last bigger pack of sale priced ribeyes. I grabbed it, but now I'm worried they're too fatty.

Look into grass fed but grain finished. A lot of times they will feed them grass for a year or so but the rest of their lives finish them in grain. This is s trick they use to be able to slap grass fed on the package. This is certainly the case here. HOWEVER, grass fed grain finished is still probably better for you than grain fed and grain finished. Nonetheless these are gorgeous steaks that will be extremely rich so maybe pair it with some white rice or something light. They will be delicious but a little heavy if you eat a lot at once

0% chance those are fully grass fed. True grass fed has significantly less marbling and the fat is a bit yellow.

If you are routinely in need of rendering beef fat for other dishes, this sounds like a good deal because you are putting that fat to use. Otherwise this is good quality but less meat than usual (per the listed weight). The rib cap on the upper one in particular looks pretty whack.

I know it’s labeled grass fed, but those are not grass fed steaks. Can tell just by looking at them. But they are very nice looking ribeyes. Much better than grass fed steaks

I’d cut off the rib cap and very large portion of fat. Roll and twine the rib cap. Cook steak normally. SLOW cook the fat and render it for tallow.
Not exactly a typical cook, but I think it would be the best way to make use of everything those steaks have to offer.
