Can someone tell me which cuts (Akami, toro, chutoro) are on which parts of this cross section of Tuna?

    That part of the tuna is the Seshimo.
    The back loin (senaka)/ tail cut (shimo).

    The top part that has more vibrant red is akami, although Seshimo is generally considered to be the lowest quality of akami.
    There’s also chiai (the black coloured muscle, and some chutoro where it’s more pink, but usually used for negitoro as the tendons and fibers are quite think in the tail and difficult to work around.

    Toro means fatty meat and is divided into 2, Oh-toro (most fatty) and Chu-toro (medium fatty). However, the part which ‘IalsodreamofSushi’ indicates as Toro doesn’t look so fatty. Oh-toro is pink.
