Sliced up some shoulder roast for lunch. Y’all think this is medium or medium rare?

  1. If it reads 130 degrees throughout, it’s medium rare regardless of what it looks like.

    Slightly on the rare side of medium rare. Kinda like west north west, I’d call it rare medium rare.

    If it’s 130f dead center it’s medium rare, regardless of how an image may look. Personally the cross section seemed beautiful, while the slices look a little unappetizing. Probably delicious regardless. For a roast like that I like very thin slices.

    Medium rare, closer to rare. , but even a bit longer cook would still be medium rare.

    Insert your probe from the side and deep enough into the mid section for a proper read, just hold the steak up with a tong. 130F is medium rare temp but at the same time you might have misread cuz the cuisson looks slightly more rare than medium rare.

    Fallow on Youtube has a really good video on steak cuisson and how to really rest your steaks (Not the double the cooking time method). If you really wanna get geeky, you can refer to that method which I believe is used in The Fat Duck’s kitchen.

    Even though it’s a bit undercooked for me, those would be fire in a steak sandwich.
