    Stuffed Peppers with Chicken Mince and Rice🫑

    Ingredients:
    – 4 large bell peppers
    – 1 lb (450g) lean ground chicken
    – 1 cup cooked rice (jasmine or basmati)
    – 1/2 medium onion, chopped
    – 1 tsp shredded cheese (optional)
    – Fresh parsley, chopped (for garnish)
    Sauce:
    – 1 can (14.5 oz / 400g) tomato paste
    – 2 tsp olive oil
    – 1 tsp paprika
    – Salt and black pepper to taste

    Instructions:
    1. Cook rice according to package instructions and set aside.
    2. Preheat oven to 375°F (190°C).
    3. Prepare peppers: Cut off tops and remove seeds.
    4. Make filling: Mix rice, lean ground chicken, chopped onion, salt, and pepper.
    5. Stuff peppers: Spoon the filling into each pepper, packing it tightly.
    6. Bake: Place peppers in a baking dish, cover with foil, and bake for 25-30 minutes. Remove foil, sprinkle cheese on top and bake for an additional 3-5 minutes.
    7. Make sauce: Heat olive oil in a saucepan, add tomato paste, paprika, salt, and pepper. Add water to adjust consistency. Simmer for 5-7 minutes.
    8. Serve: Garnish peppers with fresh parsley and sauce.
