My bad, here is the process.
Reverse sear in oven at about 265 for 20-30 minutes, I do it by eye mainly. I do it in a cast iron, but I have this metal rack that lifts the steak off the cast iron.
Pulled it out, it sat for half hour or so, but that was due to bed times for the little ones. Heated up the cast iron, put avocado oil on it. Waited until it smoked, seared both sides until I got to 125-130.
Then I just let it sit and chill for awhile. That’s all, I used seasoning and stuff, but not a ton.
