I got married a few months ago and someone gifted my partner and I a bottle of champagne to celebrate. Neither of us drink though, but I got the idea to make a cake with it instead! This was supposed to be a raspberry champagne cake with champagne buttercream. I forgot the recipe was for 3 layers instead of 2 and (obviously) overdid it on the raspberry filling. I probably should have trimmed the tops a little too. Lots of things I should have done. I still can’t stop laughing about how ugly this cake is. It was absolutely delicious though.

    Don’t forget, you can use a wall of buttercream on the layer between cakes to hold in your filling! Just pipe a ring around the edge of the flat surface on top of the bottom layer, and then fill in the interior space with the more runny part.

    It doesn’t look that bad. If you took away the sauce that is oozing out from the sides and then iced it I think it would look good or even better.

    next time maybe put the raspberry filling through a sieve? it’ll get rid of crunchy seeds and lessen the volume

    So something I do is make a wall of frosting on the outside of the cake in my middle layers to contain any preserves/jams /etc I put in the middle. It looks nicer and makes it behave better.
