    I was mirroring your efforts today with 2 pork racks on my Yoder.

    Last batch no wrap dried out at 200 internal

    This time I peach papered at 3 hrs
    Cooked at 235F

    Once wrapped, temp stalled for an hour
    Bumped up to 275

    Finished at 195, in 5.5 hours

    This time too moist
    Yours look way better than mine

    Next time. No wrap and off at 6hours or 190 internal
