Recently awarded a star, I went to Wilson's the week before. At that time it had a green star.

Tasting menu was £79 and the food was top quality. Some slight changes to the menu, due to availability of ingredients

Amuse bouche. What they said was their version of bouillabaisse, made from red snapper with a kimchi emulsion. It was more fish soup that bouillabaisse, but what a soup. Full flavoured and the kimchi did the job of a spicy rouille

Bread course. The wine pairing (which I did not have) started here, which interested me beforehand. Sourdough and cultured butter as you'd expect. But then it also came with three other dishes, buttermilk deep fried partridge, whipped smoked cods roe with dill and parsley oil and a nori tart with chicken liver parfait and pickled raddicio. All beautifully balanced and geared to getting your taste buds going

First course and the first amendment to the menu, trout instead of sea bass. Clean, fresh and it really let the flavours sing

Second course, and the second amendment to the menu. Monkfish instead of trout. It really worked well and suited the dish more than trout would have

Third course, one of the best chicken dishes I've had. The depth of flavour in the sauce was amazing, coupled with the perfectly cooked chicken and vegetables. It came with a decadently rich mash that topped a Ragu. Amazing and great use of a traditionally cheap protein

Pre dessert was a refreshing and clean elderflower and rhubarb. Italian meringue made with the elderflower added a nice sweetness, rhubarbs granita provided the refreshing element

Dessert. Tarte tatin. I'd seen it being served, one for two customers. I was dining alone, so expected a nice slice to have been served. No, just a full Tarte tatin with a subtle star anise flavour, and lovely ice cream.

Petit fours was a Pear pate de fruit and a white chocolate fudge.

I left very satisfied, very full and my wallet was not noticeably lighter!
Well deserved star, it's great cooking without being pretentious. I didn't go for the wine pairing, but could hear them rattle of about 5 mins of facts for each wine. They served a home made limoncello with the pre dessert which looked to go down well!

    I’ve only been once, a few years ago, but it was excellent. Would love to go back.
