I shouldn’t have waited so long. I got the temps to 230 and it hasn’t changed much in the first 6 hours. Just minor adjustments.

Would you say it’s way easier than smoking on the kettle? I smoke on my kettle, but have been wondering if a WSM is necessary to add alongside my kettle.
