INGREDIENTS:
Suya Shrimp:
1 pound jumbo shrimp (at least 18 or 3 shrimps per taco more)
4 tablespoons Suya spice (order some via my Amazon Store)
1 teaspoon salt
Toppings:
1 medium red onion
1/2 cup cilantro, chopped
1/2 cup feta or goat cheese
4 roma tomatoes
1 tablespoon salt
1 tablespoon black pepper
4 tablespoons olive oil
Optional: 2-3 tablespoons butter
Optional: 1 avocado
Sauce:
1/2 cup creamy peanut butter
1/3 cup warm water (more if needed)
1/2 teaspoon cornstarch
3 tablespoons soy sauce
2 tablespoons lime juice
1 teaspoon smoked paprika
1 teaspoon black pepper
Salt to season to taste
4.5” Plantain Tortillas:
1/4 cup yellow cornmeal (less if needed)
2 tablespoons water (optional if the dough dries out)
2 plantains, firm (not overly ripe or soft)
1 teaspoon salt
1/2 teaspoon garlic powder
