


Brought to temp on the cool side of a Weber kettle using briquettes and hickory. Seared over the coals. Pulled at 123deg but got more carryover than I would’ve liked. The pics make them look a lighter shade than they are in person though. The pics look medium but in person they’re more like med rare +.

Lol paper plate hate! But seriously, why are they so common with steak photos? It is always like “Check out this wagyu steak that I scored for only $400.” Then it is on cheap paper plate. Is all the money going to the steak so none is left for plates? Are the utensils also plastic? But seriously, the steak looks great! That is pretty much my preferred temp! I want to get a charcoal grill this summer and give it a go. I have always cooked with gas or cast iron on a stove.

That looks like a 1.5-2 inch cut before the cook.
I fire up my ribeye’s using charcoal as well. Great flavor but does require a little more attention. I pull at 115ish and before 120. But that still looks absolutely delicious.
As for the paper plate, last I checked that I ain’t eatin’ that so whatevers!

The only reason I hate on paper plate is because it’ll soak up some of the Ribeye juices. But the steak looks beautiful great job!

During corona I was at Foxwoods with an old friend. After a good day of gambling we were up so we decided we were going to find a bar with Johnny walker blue. We did and just as the bartender was going to poor it into plastic cups she looks at us and we looked at her…. She ended up going to another bar to get glass cups because it would just be so wrong to drink something so beautiful in plastic cups…. I feel like this is the same thing just in steak form.
