Reverse seared filet in the oven to 122 then seared on stainless steel 60 seconds on both sides in avocado oil and butter basted for the last 60. Sides are homemade shoestring fries seasoned with salt and finished with chives and truffle creamed spinach. Blue cheese crust for the wife.

    Steak looks great. Might reconsider the eucalyptus on the table tho. That smell might could make things taste off. Real strong. Nice cook.

    Homemade fries are definitely the way to go versus frozen. It’s good old fashioned ‘steak and frites’. I know shoestring is not the most popular for pairing, but I myself prefer them over traditional steak fries. The filet looks awesome.
